Salt is used to describe it because of its preservative quality. It is a covenant, then, that lasts forever. Not even the exile and the period following it until Jesus came could destroy the covenant of salt. Jesus is the one in whom the covenant is fulfilled. And because He reigns the covenant of salt is in effect for us so that our salvation is secure as we trust in Jesus Christ. His reign and our salvation will never end.
